Ricette Italiane ~ By Leelee

OK – I know everyone would rather see news about our guys, but we still have to eat while we await the return of our beloved Il Volo. IT IS RIGHT AROUND THE CORNER!!!! Yay

In the meantime, let’s eat. Now that summer is upon us and no more snow – let’s cook out – Italian style!!!!!

I received the following from our very own Ann. Thank you, Ann, for your suggestions.

For an APPETIZER, how about:

Grilled Marinated Shrimp

1/4 cup finely chopped garlic, mashed to a paste with 1 teaspoon coarse salt
2 tablespoons chopped fresh rosemary leaves plus sprigs for garnish
3 tablespoons olive oil plus oil for brushing shrimp
16 jumbo shrimp (about 10 per pound)
Four 12-inch bamboo skewers
Lemon wedges as an accompaniment

In a large bowl stir together garlic, chopped fresh rosemary, and 3 tablespoons oil and add shrimp. Marinate shrimp, covered and chilled, at least 8 hours or overnight.
In a shallow dish soak skewers in water to cover 60 minutes and prepare grill.
To grill, thread 4 shrimp on each skewer and brush with additional oil. Grill shrimp on an oiled rack, set about 5 inches over glowing coals, 3 to 4 minutes on each side, or until just cooked through. Alternatively, brush shrimp with additional oil and grill in a hot well-season ridged grill pan, covered, over moderately high heat 3 to 4 minutes on each side, or until cooked through. Garnish shrimp with rosemary sprigs and serve with lemon wedges. Serves 4.

 With:

Bruschetta

Olive oil flavored with garlic, fresh basil, or rosemary.
1 loaf of crusty Italian bread cut into 1-inch thick slices
1/4 cup extra -virgin olive oil
Prepare barbecue (medium-high-heat). Brush both sides of bread generously With oil; season with salt and pepper. Grill until golden, about 1 minute per side. 6 servings.

For a MAIN COURSE, how about the following:

Chicken Speidini

4 boneless skinless chicken breast halves or chicken cutlets
2/3 cup Italian seasoned bread crumbs
1/3 grated pecorino Romano cheese
2 Tbs chopped fresh flat leaf parsley
3-4 tsp lemon zest
2 garlic cloves, minced
Good quality mozzarella (not shredded or sliced)
Fresh bay leaves or fresh basil
Olive oil
Melted butter

1. Place chicken breasts between sheets of plastic wrap and pound until very thin. If you are using the cutlets, they do not need to be pounded.
2. Combine bread crumbs, cheese parsley, lemon zest and garlic
3. In another bowl combine even amounts of olive oil and butter
4. Dip chicken into butter mixture and then into the bread crumb mixture
5. Place a chunk of the mozzarella on the meat and roll up tight
6. Slice into 1 inch thick pieces
7. Skewer, using two skewers on each end of the meat to keep it from turning. Using two will make it easier to turn and handle on the grill, as the chicken won’t just roll around the skewer. Skewer the bay leaves around the chicken.
8. Grill over med hot coals, covered, and cook about 5 minutes per side. I use charcoal and have a bottle of water handy for any flare-ups.

It is very important to use fresh ingredients in this recipe. Do not use dry parsley, garlic powder etc. Do not leave out the lemon zest…It is the key ingredient!

Now for some:

Grilled Veggies

3 small yellow squash (about 3/4 pound)
6 Vidalia onions or large shallots, peeled and cleaned and sliced
4 yellow and/or red bell peppers, seeded and each cut into 6 pieces
2 medium red onions, peeled and each cut lengthwise into 6 wedges with root ends intact
2 tablespoons olive oil

In a large bowl toss vegetables with oil and salt and pepper to taste. Grill vegetables in batches on a rack set about 4 inches over glowing coals turning them, 10 to 15 minutes, or until tender, transferring them to a platter as they are done.
Serves 6

For DESSERT:

Grilled Peaches with Raspberry Sauce (Pesche Dolci)

5 oz raspberries,- preferably fresh (frozen will do if fresh not available)
1-1/2 tsp lemon juice
2 medium fresh peaches, peel, halved
5 tsp brown sugar
1/4 tsp ground cinnamon
1/2 tsp vanilla extract
1 tsp butter

In a blender or food processor, process raspberries and lemon juice until pureed. Strain and discard seeds. Cover and chill. Place the peach halves, cut side up, on a large piece of heavy-duty foil (about 18 x 12″). Combine brown sugar and cinnamon; sprinkle into peach centers. Sprinkle with vanilla; dot with butter. Fold foil over peaches and seal. Grill over medium-hot coals for 15 minutes or until heated through. You can also place in a broiler for 8-12 minutes for a similar result. To serve, spoon the raspberry sauce over peaches.

For BEVERAGE:

Bellini

To make Bellini:
1 ounce white peach puree
5 ounces chilled Prosecco
Pour peach puree into a champagne flute, then add the prosecco. The peach puree can either be made from ripe fresh peaches that have been peeled and pureed or you can use a commercial peach puree.

I know – you are all wondering “What is Prosecco?” Prosecco is a sparkling wine, or in other words, Italian Champagne. Prosecco is made from an Italian grape called Glera. Italian tradition dictates that Prosecco is only drunk in the springtime, but I’m sure they won’t mind if it is extended into Summer (wink). Alas, do not fret. If you cannot find Prosecco, a nice Champagne will do.

Mangiare, Bere e Divertirsi (which means Eat, Drink, and be Merry – at least according to Bing)

  1. LeeLee, this is a wonderful array of great food . How kind of you to share it.
    Thanks so much.

  2. Lee Lee, you are such a sweetie!! You made my day. What a beautiful presentation. Now if I only had Ignacio here to cook these recipes for me!!
Don’t think the other two Angels do right now but I’m sure they will. Italian men love to cook.

    1. Sorry Ann, Ignazio is coming to my house after the Philly concert to cook WITH me!

Leelee, thank you for these recipes! Beautiful presentation. I will definitely hold on to them for Ignazio’s visit!

      1. maddievll12 That’s ok, Ignazio can go with you. Gian and I have a lot to talk about! I want him to sing “Cuando, Cuando, Cuando” on their next cd. Tony Renis wrote it and Gianluca danced to it on a video that was a wow!!!! It has to be put in as show as a tribute to Renis….

      2. Hi Ann, I’m so glad I made your day. That makes me happy.

As for Maddie and Marie – you both are out of luck ’cause Ignazio is at my house. Who do you think I tried these recipes out on? (Did I mention, Piero and Gianluca, too?) Just sayin…

  3. LeeLee they all sound super delish, but I’ll have to wait until I have all the ingredients. I do have shrimp, tho, so I might try the marinated shrimp this weekend.

  4. Well, I know that Piero likes to grill steak so I will happily set aside my vegetarian self and joyously become Carnivorous just for him ( sez she with a toothy smile).

Less than a week and they will be in Saratoga! So will Jeanine and I! Yarr!

    1. Piratesorka, I’m sure Piero wouldn’t mind those grilled veggies above. With your touch on the grill, he won’t miss the steak!!!

    1. Hi Jessie, I don’t recall seeing you before on the site. I’m so glad you joined in on this page. I hope you enjoy everything else this site has to offer as well.

  5. Thank you, Leelee. These look wonderful. My mouth is watering. 20 days until Milwaukee concert!!! Yes!!

    1. Hi Maryjane, I know my mouth was watering when I was putting this together as well. Can’t believe the concerts are finally here! Time goes so fast, before you know it, we’ll be seeing them and then talking about our experiences after the concerts. Can’t wait!!!!!!!

    1. They will be selling Italian food at Festival Park and it will be like a festa! I would eat dinner first though and maybe get a snack if you get hungry later or something at one of the casino restaurants.. I will let you know what time the park will open as soon as they announce it. I did go to the casino Wednesday and the park is right next to it. They told me to bring a cushion for the chair.

      1. Your welcome Kelly. Looking forward to seeing you, and you know who again, real soon. lol Here’s hoping Elizabeth will be there too!

    2. Oh, Loretta, how I wish I could go to Festival Park. I would so love to meet you and Ann and all the other great folks who are going to Elgin (and maybe get to see those three handsome guys again). But hopefully one day we’ll meet and I’ll make sure I cook up something for you.

      NO COMMENTS, MARIE AND LINDA!!!!!!!!

  6. But Leelee, what can we say without calling you out as a fibber? You don’t cook. From what I understand calling out for pizza is a challenge for you. Sorry Alicia, would like to have had the opportunity to say something nice. Maybe next time.

  7. Was anybody able to watch the Sabado Gigante Variety Show last night? I have it marked on my calendar, that Il Volo was going to be on it. I couldn’t get it, even tho it was listed in the TV schedule.

    1. Allene: I watched and recorded the show, but did not see Il Volo! After watching it twice. I’m sure I did not see Il Volo! Sooooo disappointed!!!

    1. Mlla hope you can get a link to the guys performance with Anastasia. I only got the last 1/4 of it.
If anyone says they like her singing wiell I’ll tell you she can sing & has good vocal chords but if the song she sang is any indication of what she sings then I will not listen to her again. She sounded as if she was screaching with the guys.
From what I saw of Arena Di Verona WHY DIDN’T iL vOLO SING ANOTHER SONG BY THEM SELVES. Of ALL THE SINGERS THERE IL VOLO ARE FAR SUPERIOR SINGERS THAN ANYONE WHO HAS EVER COME OUT OF ITALY. I don’t understand WHY Italy can’t see that.

      1. Loretta, how did you get the concert? I went to the Ra1 site and they said I couldn’t have access to it. PHOOEY!!
What did they sing by themselves?

      2. L,
I understand your feelings and the passion. You do are a devoted fan.
But if you think about it they have been quite promoted lately they have been on several tv programs as you know, afternoon and evening shows, again on porta a Porta on the 5th as I wrote just a while ago, now invited in this big Verona event broadcasted all over Europe, as the only group if you think about it, so I believe their manager is keeping them quite busy, if we speak of the commercial aspect it will take a lot of space discussing the musical business nowadays, not easy job: America north and Latin included is definitely a wider market. Anyway better grow a bit slower but steadily than having a wild but often brief success, what do you think?

I hope I make you feel better, hate to think you are upset .Give us a smile will ya?? Take care.

PS I am sure Michele will dig the video out of rai replay and post it like she did last time.

  8. My mother made bruschetta and grilled veggies last night with dinner! Now I need to make some of those peaches, because those sound DELICIOUS. Thanks so much for all these recipes!

    1. Hi Isabel, you are welcome. Hope the peaches come out good. If you do make them, let us know how it came out.

  9. I have a question for everyone here. Are all these pictures of Il Volo in various recording studios (so happy they were at Abbey Road Studios!) making the wait for the new album easier or harder for you?

    1. I’m wondering why so many recording studios. I thought the new cd was already done. There sure will be surprises. Hope it’s not all in English.

    2. Easier for me. At least I know there will be one. They have taught me patience – Sort of, kinda, almost. Get the album out! Later in the year doesn’t work for me. Sorry Guys. Now please!

      1. Patience? You? I’m sorry Captain Crider, but I’m going to have to respectfully disagree with that statement! 😀 I do agree with you though. The sooner the album comes out, the better!

    3. Hi Isabel
It is IMPOSSIBLE for it to get harder! It already is at its hardest!!! I was hoping it would come out before the concerts, then when that didn’t happen I hope (still hoping) they will sell it AT the concerts…
They are doing a second album–the one in honor of Elvis. So where is the first one?????

      1. Are they doing an album of Elvis or is the album a collaboration of several artists singing Elvis songs?

      2. That’s a very good question. I don’t know the answer! I certainly hope it is 100% IL VOLO and nothing else!

      3. I had the same thought. Other artists have their CD’s and other merchandise at their concerts – hopefully IV will too!

    4. I know I read somewhere that they were going to London to record a CD of Elvis tunes. So I am quite torn, I am thrilled that they are recording but I have never been a big Elvis fan but on the other hand I LOVE IL VOLO ( surprise!). Okay so maybe I am not quite as torn as I thought, I’ll just learn to love these songs because of THEM!

      1. Marie, the way I understood it was they were working on a CD way back when–if you remember those interviews, they said it was mostly Italian. That is the CD that I was expecting to be released around now. Then it came out that they are working on another one, the Elvis one, which I thought would be ready for holiday gift season. Which still may be the case. But where oh where is the first one?? They finished it when they were here in Miami–or so I thought. The Elvis one is the one they were/are recording in London.

      1. All this hype about them being on Arena di Verona & they sing with a singer who screeches & they don’t even sing by themselves.. They are just an after thought. Stick them anywhere. They sssooo want to be accepted by Italy & they aren;t respected back. This is what I think only.

Guys come back to Us & Canada WE LOVE YOU

      2. Ignazio, Gianluca & Piero we’ll give you standing ovations while you sing your hearrts out. Well laugh at your jokes & your funny antics Ignazio.
What gets me is that Italy should be proud that these preccious young men have worked so hard to get where they are in 5 short years & they are treated as an after thought. They don’t need anyone to sing with them because they are perfect by themselves.

      3. Hear! Hear! I have never liked any of the females they have sung with. The only one I think would be interesting is Jackie Evancho.
And maybe that 9 year old Dutch girl, Amanda Willberhagen (if I have the name right).

    1. They did the new song in duet with Anastacia, as written on previous page the song is “Io che non vivo” (You don’t have to say you love me) they were very good & stylish and looked happy, I was personally pleased to hear something new (new from them as the song if from the late 60s), even if it was in duet, then the they sang O sole mio, again with Anastacia and to me something sounded bit odd at the very end, but they did not surely have much time to rehearse with her, the show was a very complex a spectacular machine with pieces of opera, a ballet, lots of change of artists and scenic designs, a contest for tenors etc. Sorry I cannot post the video a took from my screen as is too heavy to email.
The will leave on the 3rd, Antonella was as usual very nice and made them feel at ease, Gian took the opportunity to tank their producers and manager, Igny said they are 9 months out of ten traveling abroad but they keep Italy in their heart and Piero (the business man) promoted the Taormina concerts.

Fo those of you wandering about new CDs I gather from their recent interviews that the Elvis project is a cooperation with other artists, their new cd is not due out before later this year in one interview even mentioned beginng next, well may be they will speed it up but as they mentioned listening to many songs (hundreds) and scouting new ones from composers.
      cheers

      1. Thanks, Mlla. I had a feeling the Elvis recordings were a collaboration. I thought the couple of songs they sang with Anastacia were good. I like her. Them? Well of course they were GREAT!! The video is hard to hear and the sound is a little distorted, but it seems they received a good reception from the audience.

I love you, Loretta, but I think I have to disagree. I think they are catching on in Italy. Why else would a 2nd night be added to Taormina? With all the touring that they have been doing in Italy I think it is paying off (and I don’t mean monetarily, I mean recognition and appreciation of their talents). That’s just my five cents (inflation, you know).

      2. I certainly hope that the songs they sing on this tour are not the same ones they sang the last tour. I do not expect the entire concert to be new songs, but I would certainly hope that at least half of it is new material!

      3. although they (Piero) previously also said they were having a lot of Italian songs,…so I wonder, anyway they were in Bologna recording lately, guess the process is ongoing and things can develop by the day. or they like to keep the suspense.
gosh time flies, especially when connected, bye x now

      4. Thank you LeeLee I love you also, sincerely. You are probably right. I get caught up on how they are treated & what cheesed me off also was Anastasia giving googoo eyes at Piero & falling all over Gianluca & Ignazio is at the other end of the line & she ignored him without including him in her sights. I know I am going to here an uproar but he is every bit as handsome as the other guys if not better. He doesn’t push himself into a group.

I’ll put my blinders on now so I will miss what another group of people are going to say

  10. Info for those of you going to Festival Park in Elgin (Chicago area). They will let us know in about a week regarding adding some new acts before the show leaving it to start at 7:00 pm instead of 8:00 pm. Also, the stage is next to the casino and we will be able to access restrooms, gambling and restaurants there and some food booths will be in the park. Of course you can go into the casino as early as you like and then the park when it opens. They are trying to make this a really special event for everyone – I hope including sunshine!

    1. Penina they can sing the alphabet or Ring around the Rosey I don’t care I just want to hear whatever they sing & look at those handsome faces
I was at a store the other day & lo & behold Il volo came on their intercom. I literaly went up to the cashier & asked her if that was her radio & she said it was the intercom & said someone puts different artists on the intercom. She said she has never gone to an Il volo concert & didn’t have the time. So I told her before she dies she has to go to see the very BEST singers in the wwoorrlldd as Piero says.

      1. Loretta, I am in a choir and one of the songs we sing is What a Wonderful World. At several places in the music the word “world” is strung out over three notes. Every time I sing that particular “world” I have a hard time keeping a straight face! Inside I am hearing Piero and Ignazio arguing about how to pronounce “worrrrrrrrrrllllld!”

        ________________________________

    1. Stay away from the Casino, Loretta. We don’t need you losing your money before the concert 🙂

      1. I don’t recommend anyone gambling at the casino. It is addictive and that’s why they call it gambling. The house always wins – or takes back! lol It’s just nice to know we can use the facilities and maybe cool off if we have to.

  11. Loretta do not be too upset, you will have the chance to see them on Porta a porta on the 5th!
you know as the ancient Latin saying: Nemo propheta in patria

Bocelli as well first became very popular abroad.

    1. Don’t know what that means Mlla.
I just discovered they sand 2 songs together with Anastasia
I didn’t not like her falling all over Piero & Gianluca & ignoring Ignazio on stage no less. The other day she was distinguishing Piero from the others because of his glasses as if he was the most prominent of the group. I am not saying anything against Piero I don’t think anyone should praise anyone of them above the others.

      1. Loreta, I think Ignazio’s position on the stage when they do a duet do not favor him that stays aside. With Laura Pausini was the same thing and she gave more attention to Gianluca. Now Anastacia (I did not like her voice) was with Piero, but I think Ignazio doesn’t matter about, if it bothered him he would ask to change place with Piero or Gian. I also think she was not nice saying she liked more Piero because of the glasses. (???) Placido Domingo did the same on Porta a Porta interview saying that his grandson likes more Piero and wear the glasses like him. I agree with you “anyone should praise anyone of them above the others” at least not in public.

      2. Do you mean sort of like what most of us do here, and on ATIV, and on Mundial, and all the other fan pages? I don’t think Anastacia said she likes Piero more, just that he wore glasses and so does she. Judging by the way she reacted to their singing, and all 3 of their reaction to her, there is mutual admiration all around. We all love all three guys, but most of us favor one over the other, which is only natural. I personally don’t think there is anything wrong with that. They know we love each one of them. With that being said, I think we should move on to the subject at hand. CONCERTS AND M&G’S AROUND THE CORNER GANG!!!! YAY! I don’t care what they sing. I’m sure there may be new songs, but even if there aren’t, who cares? They’re here and we’re getting to see them up close and hopefully, for most, personal.

Let’s savor the moment! Good night!

  12. EVERYBODY!!!!!!!!! Just type in “Il Volo Verona 2014” on youtube and you there is a 12 minute video that has excellent visual and audio quality!!!!!!!! I’m not sure if her voice was perfectly suited to a harmony with them but I DON’T CARE!!!!!!!!! I got to hear AND see them sing so everything is perfect. All three of their voices sounded SPECTACULAR!!!!!!!!!!!!!! I actually really liked Anastacia’s solo so I am going to try and find some more of her music. I WISH The Boys had had a solo but, oh well. I AM JUST SO HAPPY THAT SOME KIND, WONDERFUL PERSON PUT THAT VIDEO ON YOUTUBE SO EVERYONE CAN HEAR ANGELS SING!!!!!!!!!! 😀

      1. Theree are two of them. One is the one Isabel mentioned that is a bit more than 12 minutes, and then there is another one that is 8 minutes. The 8 minute one doesn’t have Anastacia’s solo after the boys–whoops! GUYS leave the stage. Which is fine by me!

    1. I have not seen this concert yet but will make a comment about the singers that the boys get paired with sometimes. Most of female singers they have been with in the past two years except for Streisand were not in their level of voice training. Streisand was and it was obvious in all of those shows. In the Assisi concert the two females were the wrong match for these guys – kind of like matching two jeeps up against a Mercedes-Benz.

  13. Mlla, thank you for your input. I like what you said”better grow a bit slower but steadily than having a wild but often brief success” I certainly agree with you. just take an example of another young star and a group. they are having a lot of problems coping with their quick success. one of them actually said that they were taking a three month break as they were exhausted with touring and he said”I can’t even remember what my mother looks like, it’s been so long”. this is very troubling about how much pressure is put to bear on these young stars by their producers. I am glad they are starting to complain. I really don’t want our boys to get into this situation and I think their producers are allowing them to spend more time in their home environment which keeps them grounded and out of trouble. let them go slowly and enjoy normal life as well, they have their whole lives before them, there is no hurry. the only hurry is studio’s wanting to cash in on you fast. enjoy the journey boys, and don’t let anybody pressure you.
I agree with some of you: I like Anastacia, but I did not particularly like her voice.

  14. Leelee, All of us have a favorite and make comments about them I think is VERY NORMAL. I only was answering to Loretta that was bothered about Ignazio be ignored by the female singers. And about change the subject, it is with the administration of the site, and please, don´t tell what we have to say or not. This is a free forum and we can make comment since we not disrespect or slander anyone. I hope you can see them in personal and M&G, and a good night to you too.

    1. Josie, I absolutely did not say what anyone can say or ot say. I am well aware of what kind of forum this is. The conversation was leaning toward negativity and I was just trying to bring it onto a lighter note. Don’t take things so seriously.

      1. In addition, I was referring to your statement, and I quote your comment above: “I agree with you “anyone should praise anyone of them above the others” at least not in public.” All I was “JOKING” about was that we do the same thing. That is all I was saying.

If anyone is getting nasty, I would think your “tone” in which you say “good night” above, is rather sarcastic, and not appreciated.

  15. LeeLee, love your menu. I will share it with my husband since he’s the chef in our house. Well I can help with the drink – Bellini, It sounds easy enough to prepare and I love peach!

Our guys are great tonight! Love their performance. Love them! In just a few days I’ll see them again…Yay…Cheers everyone!
